INGREDIENTS

4 pieces Eggplant
2 cloves garlic, minced
2 teaspoons Ground Cumin
1 teaspoon Cayenne pepper
2 teaspoons Sesame Oil
1/2 packet NESTLÉ® All Purpose Cream
1 piece Lemon
3 tablespoons Olive Oil
1 teaspoon Paprika
4 pieces pita bread, warmed
1 To Taste Salt
1 To Taste Pepper

STEPS

Step 1 Roast the eggplants in a 200 degree C oven until tender, about 30 minutes. Let cool.
Step 2 Once cool, peel the eggplant and remove the seeds.
Step 3 In a food processor, combine eggplant meat with the next 6 ingredients. Blend. Season with lemon juice, salt and pepper.
Step 4 Chill the mixture.
Step 5 To serve place in a bowl, garnish with olive oil and paprika on top and pita bread on the side.
