Step 1 | Pierce eggplant with a for several times. Roast over an open flame until well charred. Set aside in a bowl and cover for 10 minutes. Peel off the skin and cut into 1-inch pieces. Set aside. (20mins) |
Step 2 | Sauté garlic, onion and tomato in oil in a non stick pan. Add eggplant and season with ½ sachet of MAGGI® Magic Sarap®. (10mins) |
Step 3 | Beat eggs and season with remaining ½ sachet of MAGGI® Magic Sarap®. Pour into the pan with eggplant and stir until barely set. Place a plate on top, flip and carefully slide back in the pan to cook the other side of the torta. (10mins) |
Step 4 | Remove from the pan and transfer on a serving plate to rest for 10 minutes |
Step 5 | To prepare Sour Cream, mix NESTLÉ® All Purpose Cream, garlic, lemon juice, salt, pepper and spring onion. Serve with Tortang Talong. (5mins) |
