Step 1 | Mix butter and sugar and whisk until smooth. Gradually whisk in mashed banana, eggs, vanilla extract, lemon juice, water and ¼ cup NESTLÉ® All Purpose Cream. then mix for low medium speed and add the eggs one at a time together with vanilla extract Whisk until smooth. |
Step 2 | Sift flour, baking soda an salt in bowl. Mix in with the wet ingredients until just combined. Do not over mix. |
Step 3 | Brush a loaf pan with butter and line with parchment paper. Pour cake batter ¾ of the way and bake in a 320ᵒF oven for 30 minutes or until a skewer comes out clean when inserter in the middle of the cake. Set aside to cool completely. |
Step 4 | For the frosting, whisk the butter , cream cheese and lemon juice until light and smooth. Whisk in NESTLÉ® All Purpose Cream. Gradually add powdered sugar while whisking until thick and smooth. Refrigerate for 30 minutes. |
Step 5 | Remove banana cake from the loaf pan and peel off parchment paper. Slice in half lengthwise. |
Step 6 | To assemble, spread frosting on one part of the cake and place the other part to sandwich the frosting. Spread frosting on all sides of the cake. Refrigerate for 1 hour before slicing and serving. |
