Step 1 | Whip butter with sugar, brown sugar, and vanilla until light. Mix in eggs one at a time. |
Step 2 | Sift flour with baking soda, salt, and cinnamon. Mix in with the wet ingredients. |
Step 3 | Add oats and raisins. Mix well and form into 3-tbsp size balls and refrigerate for 5 minutes to set. |
Step 4 | Arrange cookie dough balls on a sheet tray with 3 inches apart. Bake in a preheated 350°F oven for 10-15 minutes or until a toothpick comes out clean when inserted in the cookie. Set aside to cool completely. |
Step 5 | For the filling, whip butter, vanilla, and cream cheese for 2 minutes. Add powdered sugar and NESTLÉ® All Purpose Cream and continue to whip until light. |
Step 6 | Sandwich filling with 2 cookies and serve. |
